When Waka Flocka Flame joins me in the kitchen, it’s alllll about the flavor and the fun.
Our mission: An even better BLT. Waka wanted a healthier alternative to bacon, so I taught him how to make salmon bacon, crisping up the fish just like the real thing.
The finished product brunchifies the classic sandwich with crispy smoked salmon, avocado, and microgreens, plus sungold tomatoes that make every bite pop. It’s high-protein, camera-ready, and giving major Martha Stewart x Snoop Dogg energy.
We may have been twinning in our aprons, but only one of us is actually a rapper…believe it or not.
BAE-L-T Waka’s Way
Makes 2 toasts
Ingredients
8 oz smoked salmon lox
Avocado oil spray
2 slices bread of choice
1/2 cup organic microgreens
1 avocado, thinly sliced
1 cup organic sungold tomatoes, halved
2–3 teaspoons EVOO (I love Kosterina, use code Chefbae15 for 15% off!)
Flaky sea salt, for finishing
Instructions
Preheat the air fryer to 400°F.
Pat the smoked salmon lox very dry with paper towels (this is key to getting that crispy “bacon” texture).
Lightly spray both sides of the salmon with avocado oil.
Lay slices flat in the air fryer basket (do not overlap; work in batches if needed). Air fry for 6–8 minutes, checking at 5 minutes, until edges are crisped and slightly caramelized. Remove and let cool slightly—it will crisp up more as it sits.
Toast the two slices of bread until golden and crisp.
Top each piece of toast with microgreens, ½ avocado, the salmon “bacon,” and sungold tomatoes.
Finish each sandwich with a drizzle of EVOO and a pinch of flaky sea salt.
