Drunken-Style Kelp Noodles
New Year, new noodle dish. Natalia Rudin visited and we collaborated on the best plant-based low-calorie kelp noodle dish.
The drunken noodle-style sauce is a perfect mix of umami, heat & zest. Plus, kelp noodles are a great low-calorie pasta option. An entire bag of these noodles is only 10 calories! For added protein, tofu, egg or ground chicken will work wonderfully with this.
Ingredients:
For the Noodles:
7 oz Kelp Noodles drained & rinsed
2 tbsp Natural Oil we used algae oil, but avocado works
2 Thai Chillies deseeded, very finely chopped
2 Green Onions thinly-sliced
1 cup Broccolini thinly-sliced
1 Red Bell Pepper thinly-sliced
For the Sauce:
3 large Cloves of Garlic minced
1 tbsp Ginger microplaned
2 tbsp Vegan Fish Sauce
2 tbsp Coconut Aminos or Dark Soy Sauce
2 tsp Sesame Oil
1-2 tsp Coconut Sugar
1 tbsp Lime Juice
1/2 tsp Chili Flakes
Chopped Peanuts & Green Onions for garnish
Instructions:
In a small bowl, whisk together the sauce ingredients. Sauté the vegetables with the oil for 4-5 minutes on medium heat. Add in the kelp noodles and enjoy!
