Fluffy Low-Carb Blueberry Pancakes
Ingredients:
2 ripe Bananas
6 Egg Whites, room temp (Chef Bae Pro-Tip: Do not use egg whites that come in the carton, they are pasteurized and will not form stiff peaks)
2 scoops Vanilla Protein Powder
Splash of Vanilla Extract, optional
Fresh Blueberries
Instructions:
Mash bananas and whisk in protein powder and vanilla, if using.
Whip egg whites until stiff peaks form.
Fold banana mixture into the egg whites gently.
Heat a greased skillet over medium heat.
Spoon batter onto skillet and add blueberries before flipping halfway through cooking.
Use a lid for more even cooking.
Cook until golden and enjoy!
