Herby Chicken Salad (Mayo-Free & Dairy-Free)
This chicken salad seedy cracker combo is one of my all-time faves. The chicken salad is light, creamy, tangy & Brooke’s Famous Seedy Crackers are the absolute perfect crunch (year-round). Your weekday meal prep just got an upgrade!
Ingredients:
For the Chicken Salad:
- 2 cups Rotisserie Chicken, shredded
- ½ cup Plain Unsweetened Coconut Yogurt
- 1–2 tbsp Hot Sauce (I use my Chef Bae LA Green Juice Hot Sauce)
- ½ cup Celery, finely diced
- 1 small Green Apple, shaved or thinly sliced
- 2 tbsp Fresh Basil, chopped
- 1 tsp Aleppo Pepper Seasoning
- 1 tsp Sumac Seasoning
- Olive Oil, for drizzling
- Salt & Black Pepper, to taste
- ⅓ cup Pickled Onions, thinly shaved (for serving)
- Arugula, for serving
Instructions:
For the Chicken Salad:
In a large bowl, combine shredded rotisserie chicken, diced celery, shaved green apple, and chopped basil.
In a small bowl, stir together the coconut yogurt, hot sauce (to taste), salt, and pepper. Adjust seasoning if needed.
Add the yogurt dressing to the chicken mixture and toss until everything is evenly coated and creamy.
Drizzle with olive oil and sprinkle Aleppo pepper + sumac over the top.
Serve with arugula, pickled onions, and a handful of Brooke’s Famous Super Seedy Crackers on the side!
