Salmon nuggets > chicken nuggets...that's it. I said what I said.
Salmon Nuggets (GF/DF)
Ingredients:
For The Salmon Filling:
1 lb Skinless Salmon Fillet, chopped into a ground meat texture
1 Egg
¼ cup Fresh Parsley and/or Fresh Dill, finely chopped
1 tbsp Dijon Mustard
¼ tsp Garlic Powder
¼ tsp Onion Powder
¼ tsp Sea Salt
Pinch of Black Pepper
For The Coating:
½ cup Almond Flour
2 tbsp Toasted Sesame Seeds
½ tsp Sea Salt
For Pan Frying:
Avocado Oil
For Serving:
Lemon Wedges
Chef Bae’s DF Coconut Tzatziki
Instructions:
In a medium bowl, mix together the salmon, egg, herbs, Dijon mustard, garlic powder, onion powder, sea salt, and black pepper until combined.
Spoon the mixture onto a parchment-lined tray and shape into nuggets. Freeze for 30 minutes to firm up.
In a shallow dish, combine almond flour, sesame seeds, and sea salt to make the coating.
Once the nuggets are chilled, dredge each one in the coating mixture.
Heat avocado oil in a skillet over medium heat. Pan-fry the nuggets for 2–3 minutes per side, or until golden brown and cooked through.
Remove from the skillet and drain on a paper towel–lined plate.
Serve hot with lemon wedges and Chef Bae’s Coconut Tzatziki & enjoy!
