I had the incredible opportunity to make this falafel alongside MasterChef winner Yehuda Amar. The key to its flavor lies in the Mashwiya Sauce, a smoky, spiced blend of charred eggplant, tomatoes, peppers, and preserved lemon. The falafel itself is made by grinding fresh herbs and chickpeas with onion, garlic, and soaked bread before adding sesame seeds, cumin, coriander, and a touch of baking soda—an essential ingredient for achieving a light and airy texture.

Ingredients:

For the Falafel:

- 2.2 pounds Dried Chickpeas, soaked overnight

- 1 handful Fresh Parsley
