Hi! Generally speaking, green spirulina is the whole algae with more nutrients and a stronger taste, while blue spirulina is just the pigment, milder in flavor & great for vibrant color!
Hmm, I use a wide variety as a Chef, but typically depends upon what protein I'm cooking! I love stainless steel, cast iron, and ceramic coated when I need non-stick.
