Ingredients (for 2 servings):
For the Salmon:
2 6. oz Salmon Fillets
1 tbsp Fresh Ginger, grated
2 cloves Garlic, minced
1 tbsp Stone Ground Mustard
2 tbsp Maple Syrup
1 tbsp Chili Crisp, I use a soy-free one from Everiday
1 tbsp Olive Oil
Salt & Black Pepper, to taste
For the Sweet Potato Purée:
2 medium Sweet Potatoes
1 tbsp Vegan Butter
1 tbsp Olive Oil
1/4 tsp Cinnamon
1/4 tsp Nutmeg
Salt, to taste
For Garnishing:
2 Scallions, thinly sliced
1 tbsp Toasted Sesame Seeds
Extra Olive Oil, for drizzling
Instructions:
1. Preheat the oven to 400F. Pierce the sweet potatoes several times with a fork and wrap them in foil. Roast on a baking sheet for about 30-40 minutes, until soft, but not mushy. Allow the potatoes to slightly cool for about 10-15 minutes.
2. Add the vegan butter, olive oil, cinnamon, nutmeg, and salt. Use a potato masher or immersion blender to mash until smooth and creamy. Adjust seasoning to taste. Set aside and keep warm.
3. In a small bowl, whisk together the grated ginger, minced garlic, stone ground mustard, maple syrup, chili crisp, olive oil, and a pinch of salt and pepper. This will be your marinade/glaze.
4. Place the salmon fillets on a plate or shallow dish, and pour the glaze over the top. Let it marinate for 10-15 minutes, or while you prepare the rest of the dish.
5. Heat a non-stick or cast-iron skillet over medium heat. Once hot, add a little olive oil.
6. Add the salmon fillets, skin-side down if they have skin. Cook for about 4-5 minutes, until the skin is crispy and the salmon is halfway cooked through.
7. Flip the fillets and cook for another 2-3 minutes, basting the salmon with the glaze as it cooks. The salmon should be golden and cooked to your desired level of doneness.
8. Spoon a generous amount of the sweet potato purée onto each plate, spreading it out into a smooth base.
9. Place the cooked salmon fillets on top of the purée.
10. Top with sliced scallions, a sprinkle of toasted sesame seeds, and a drizzle of olive oil.
11. Serve immediately and enjoy the beautiful balance of savory, sweet, and spicy flavors!
