Ingredients:
For the Veggie Latkes:
- 4-6 Veggie Latkes (recipe linked here)
For the BAEgel Toppings:
- 1/2 cup Cashew Cream Cheese (store-bought or homemade)
- 4 ounces Smoked Salmon (I used hot smoked)
- 1 small Tomato, sliced
- 1/4 small Red Onion, thinly sliced
- 2 tablespoons Capers
- Fresh Dill, for garnish
- Salt & Black Pepper, to taste
Instructions:
1. Reheat your leftover Hanukkah veggie latkes (either in the oven, skillet, or microwave) until crispy and warm.
2. Spread a generous layer of cashew cream cheese on top of each veggie latke.
3. Layer smoked salmon, tomato slices, and thinly sliced red onion on top of the cream cheese.
4. Sprinkle with capers, fresh dill, and a pinch of salt and pepper for extra flavor.
5. Stack the latkes (like a bagel sandwich) and serve immediately. Enjoy!
